Coconut rice
Coconut rice is a popular dish in the coastal regions of Colombia. It is common in fish or other marine cuisine. In Cartagena, they almost daily eat Coconut rice in place of standard normal white rice.
Preparation of Coconut rice
Coconut rice is easy to make, use fresh coconut milk or a packet and cook it along with the rice.
To prepare fresh coconut milk.

Make a hole in one of the three holes in the coconut one of the three will go easily.

Let the water run out and catch it.

Opening a coconut can be done in different ways. By making it warm in the oven and then hammer it open, or with a machete.

Grate the coconut meat now (the white) until you have 3 or 4 cups.

Stop all this in a blender and pour the coconut water and a cup of hot water.

Now blend this for 1 minute.

Put the entire mixture into a colander and press down firmly so that the water seperates from the meat. This water / milk you collect of course!

Repeat steps 4 through 7 in place of the coconut water, add a cup of hot water.
